11/2 cups whole wheat (or gluten-free self-raising flour*)
1/2 teaspoon mixed spice
1/2 teaspoon ground cinnamon
1/2 cup golden raisins
2 egg whites
2 tablespoons cold-pressed olive oil (or almond oil*)
1 cup cooked apple chopped
1 tablespoon honey or concentrated apple juice (or 1 teaspoon Nature Sweet Sugar Substitute)
1/2 cup unsweetened soy rice or coconut milk
(NF, DF, V, GF)
Preheat the oven to 175°C (350°F).
Sift the flour and spices and add golden raisins.
Beat the egg whites add the oil, apple, honey and soy milk and blend thoroughly.
Add to the dry ingredients and stir until thoroughly mixed.
Spoon into a lightly greased muffin tin and bake in the oven for 17 minutes, or until cooked.
